We hope this finds you doing well and enjoying summer. Here in Bangkok we're loving the cooling rains and hot bursts of sun in between. Things are lush and green, we're growing our Team in three countries and putting the finishing touches on some new trips which we'll tell you about soon.

In this edition of Albino Smiles we’ll give you the latest on Smiling Albino co-founder Daniel Fraser's trip to North America, share some news about our trips in Nepal, an introduction to some new Bangkok walking trips, give you the chance to win a Thai t-shirt and introduce you to a great Thai recipe.

It has occurred to us over the past year that in fact, yes, walking in Bangkok can be an outstanding and educational (not to mention entertaining) experience. We've recently designed several neat walking trips between 2-5 hours that peel-off some of the mysterious layers of this great city. Dish of the month
Thai Prawn Salad

A tangy, spicy summer salad

  • Salad
  • 200gr peeled prawns
  • 1/2 cup thinly sliced fresh lemon grass
  • 1/4 cup thinly sliced shallots
  • 1/4 cup young ginger julienne
  • 4-5 thinly sliced kaffir lime leaves
  • 1/4 mint leaves
  • Dressing
  • 3 tbsp lime juice
  • 4 tbsp fish sauce
  • 2 tbsp sugar
  • 6 spur chii peppers, thinly sliced

Directions:

This one's real easy. Peel and clean the prawns, then blanch them in boiling water until cooked, then quickly transfer them to cool water. Drain and set aside.

Toss prawns, salad ingredients and dressing well, put on a plate and garnish with fresh mint.
